Raw Banana

Khansland Raw Banana is organically cultivated kacha kola — whole green bananas harvested at the full starch stage, before the natural enzymes begin converting starch to sugar and softening the flesh. At this stage, the banana has a dense, starchy, firm flesh with a clean, neutral, slightly astringent flavour that absorbs spices beautifully during cooking and maintains its structure through frying, simmering, and steaming.

Raw banana is the most important cooking banana in the Bengali vegetable repertoire — not merely a substitute for ripe banana but an entirely distinct ingredient with its own culinary identity. Its combination of neutral flavour, firm texture, high starch content, and excellent spice absorption makes it uniquely suited to preparations where these characteristics are essential.

Kolar kofta — raw banana dumplings — is the most celebrated raw banana preparation: green banana is boiled, mashed, seasoned with onion, ginger, chili, and spices, formed into oval koftas, and simmered in a rich cashew and cream gravy. The result is one of the finest vegetable-based dishes in the entire Bengali repertoire. Raw banana chips — thinly sliced and deep fried in mustard oil with salt — are a crispy, naturally starchy snack with excellent shelf life.
