Cloves

Khansland Cloves are whole, dried clove buds of the highest quality — large, plump, fully formed buds with the oil glands fully intact, distinguished by their dense weight, dark brown colour, and the extraordinarily intense, penetrating, eugenol-rich aroma that identifies genuinely high-quality cloves. Our cloves are selected from the first and second drying passes, which produce buds with the highest essential oil content and the deepest, most complex fragrance.

Cloves are among the most powerful and concentrated spices used in Bengali cooking — a small quantity goes a very long way, and the quality of the clove dramatically affects the character of the final dish. Properly dried, full-oil cloves add a deep, warm, complex sweetness to biryani, korma, and spiced meat preparations.

In garam masala, cloves play a critical architectural role — providing the deep, warming bottom note that supports the lighter, more volatile fragrance of cardamom and the warmth of cinnamon. Clove oil — the eugenol extracted from the buds — has one of the strongest natural antimicrobial activities of any food spice, and a clove pressed against the gum near a painful tooth is a traditional and effective pain management technique.
