Cinnamon

Khansland Cinnamon is genuine Ceylon cinnamon (Cinnamomum verum) — the soft, thinly rolled, multi-layered quill form — rather than the harder, thicker cassia bark that is commonly sold as cinnamon in much of South Asia. The distinction matters enormously in both flavour and in the composition of the active compound cinnamaldehyde. Ceylon cinnamon has a sweeter, more complex, and more delicate flavour profile than cassia.

The thin, paper-like layers of genuine cinnamon quills dissolve completely into sauces and gravies with prolonged cooking. In biryani, the cinnamon quill is one of the first aromatics added to hot ghee, blooming within seconds to release the essential oils that perfume the entire dish. In slow-cooked meat curries, a broken piece of cinnamon contributes a subtle, warming sweetness that is almost imperceptible individually but whose absence would immediately be noticed.

In sweet preparations, cinnamon's role is equally central. The combination of cinnamon, cardamom, and cloves in milk-based sweets and warm beverages is the flavour signature of Bangladeshi celebration cooking.
