Sun-dried Tomatoes

Khansland Sun-dried Tomatoes are produced from organically grown local tomatoes harvested at peak summer ripeness and then sun-dried over three to four weeks to reduce moisture content by approximately 80%, concentrating the flavour to an intensely sweet, tart, deeply umami richness that fresh tomatoes cannot approach.

The tomatoes we use are the deeply flavoured local Bangladeshi varieties with a more pronounced acidity and a more complex fruity character than large commercial varieties. The result is a sun-dried tomato with a distinctive Bangladeshi flavour profile — intensely sweet-sour, deeply umami, and with a slight caramelised quality from the long sun exposure.

Sun-dried tomatoes can be used in multiple ways. Rehydrated in warm water for 20 minutes, they become plump and soft enough for chopping into chutneys, salads, and curry bases where their concentrated flavour adds depth without adding liquid. Used directly from dry, they can be ground with spices to create intensely flavoured spice pastes for meat marinades. Mixed with olive oil and garlic, they produce a condiment that is excellent spread on flatbreads or used as a dipping sauce.
