Sun-dried Raw Rice

Khansland Sun-dried Raw Rice is harvested from organically grown paddy fields and dried naturally under the open sky, allowing the grain to cure slowly at ambient temperature and retain its natural starch structure, aroma, and maximum nutritional integrity. This traditional drying method produces rice that cooks to a firm, separate, non-sticky texture that is the hallmark of high-quality raw rice.

The clean, milky flavour of atop chal is mild and neutral, making it an ideal canvas for the bold spice blends and aromatic temperings of Bengali cooking. It absorbs flavour beautifully from the curries and dal it is served with, and its firm texture holds up without clumping.

Sun-dried raw rice is also the preferred rice for grinding into rice flour for traditional pithas, sweets, and pancakes. Soaked overnight and stone-ground, it produces a fine, smooth flour with a fresh flavour that packaged rice flour cannot replicate. It also produces the best panta bhat — fermented leftover rice soaked overnight in water — a cooling summer meal rich in B vitamins from natural fermentation.
