Cox's Bazar Dry Fish sources from the artisan sun-drying grounds of Maheshkhali and Teknaf, where generations of fishermen have perfected the traditional 'churi shutki' drying method. The fish are caught fresh from the Bay of Bengal, lightly salted, and laid out to dry under the Cox's Bazar sun for several days — a process that concentrates the flavour and produces the characteristic aroma of authentic Bangladeshi shutki.
