Rice Cake Mix

Khansland Rice Cake Mix is pithar guro — a specially prepared rice flour blend designed for the home production of traditional Bangladeshi rice cakes (pithas) that are one of the most important expressions of Bengali culinary heritage and remain central to winter festival celebrations including Poush and Makar Sankranti.

Traditional pitha-making requires stone-ground rice flour of a specific fineness and moisture content, prepared from properly soaked and dried atop (raw) rice. Getting the rice flour right is the most technically demanding aspect of pitha-making, and the step that most commonly causes failure for home cooks. Our pithar guro eliminates this challenge by providing rice flour milled to the exact specification required for the most important pitha varieties.

The blend is specifically formulated for the four most common Bangladeshi pithas: chitoi pitha (thin rice pancakes cooked in a clay mould); patishapta (thin rice flour crepes with coconut-jaggery filling); bhapa pitha (steamed rice dumplings filled with date palm jaggery and coconut); and puli pitha (boiled rice dumplings with sweet fillings). The packaging includes traditional recipes for all four varieties with measurements calibrated for our specific flour.
