Puffed Rice Balls

Khansland Puffed Rice Balls are murir moa — the beloved traditional Bangladeshi winter sweet made from freshly puffed rice bound together with hot date palm jaggery syrup, formed into compact, palm-sized balls while the syrup is still warm and pliable, and allowed to set to a crisp, fragrant confection that is the nostalgic taste of winter celebrations across Bangladesh.

The making of murir moa is technically demanding and entirely seasonal — it requires freshly made puffed rice that has not absorbed moisture, date palm jaggery cooked to the precise hard-ball stage, and skill in working quickly with hot syrup before it sets. A well-made murir moa should be dense enough to hold its round shape firmly without crumbling, yet should shatter cleanly into a mix of crisp puffed rice and sweet jaggery when bitten.

Our murir moa are made fresh in small batches during the date palm jaggery season (December to February) using stone-fired puffed rice and traditional nolen gur from our Jessore gachhi network. Outside the fresh season, we produce a version using stored patali gur that maintains the authentic character of this traditional sweet.
