Pickles

Khansland Pickles are a range of traditional Bangladeshi achar preparations made using seasonal produce at peak ripeness and traditional preservation methods that have been passed down through generations of Bengali households. Our pickle range covers the essential categories: kacha aamer achar (raw mango pickle), jolpai achar (olive pickle), lebu achar (lemon pickle), and mixed vegetable achar — each representing a distinct flavour tradition.

Traditional Bengali pickle-making is an art form requiring precise judgement of the correct ratio of salt to oil to acid to achieve preservation without oversalting, the correct preparation of each vegetable to ensure it absorbs the pickling medium without becoming soggy, and the correct balance of spice — typically mustard seeds, fenugreek, nigella, dried red chili, and turmeric.

Our pickles are made with cold-pressed mustard oil as the preservation medium rather than the refined vegetable oil used in commercial production. Mustard oil's natural antimicrobial properties from allyl isothiocyanate content are a primary reason traditional mustard oil pickles achieve months-long stability at room temperature without any artificial preservatives or refrigeration. Each jar is labelled with the variety, preparation date, and a freshness indicator.
