Meat Curry Spice Mix

Khansland Meat Curry Spice Mix is a hand-blended combination of whole and ground spices formulated specifically for the preparation of traditional Bangladeshi mutton and beef curry — the richest, most celebratory, and most demanding of all Bengali curry preparations. The blend is calibrated for the longer cooking times and more robust flavour requirements of red meat, delivering a curry with the deep, layered, aromatic complexity that distinguishes truly excellent Bengali meat curry.

The blend contains whole spices for tempering — dried red chili, cumin seeds, bay leaf — alongside ground spices for the masala base including turmeric, coriander, cumin, and a specially proportioned garam masala component with higher cinnamon and clove content than the fish curry blend. The higher garam masala intensity is deliberate — the robust flavour of mutton and beef can carry and benefit from a more assertive spice character.

The blend also includes a small quantity of dried onion flakes and dried ginger, which serve the practical purpose of beginning the flavour building process before the fresh aromatics are added in cooking. This head start on flavour development is particularly valuable in pressure cooker preparations. One packet is precisely measured for approximately 750 grams to 1 kilogram of bone-in meat, producing a curry of medium heat intensity with the full depth of traditional Bengali meat curry flavour.
