Fried Puffed Rice

Khansland Fried Puffed Rice is bhaja muri — the traditional Bangladeshi seasoned puffed rice snack made by tossing freshly stone-fired puffed rice in mustard oil, turmeric, salt, and a selection of warming spices to produce a light, crispy, intensely flavoured snack mix with a golden colour and a satisfying crunch that is one of the most addictive and universally enjoyed foods in Bangladeshi snacking culture.

The frying of bhaja muri is done in very little oil — just enough mustard oil to coat each grain lightly and carry the spice coating — and at low temperature, which warms the puffed rice through and drives off any residual moisture to maximise crunch rather than actually frying in oil. This technique produces a product that is light and crispy rather than greasy, with the spice coating adhering evenly to each grain.

Bhaja muri is the essential starting point for jhalmuri — Bangladesh's most beloved street snack — where seasoned puffed rice is mixed to order with finely chopped onion, cucumber, tomato, green chili, fresh coriander, roasted peanuts, sev, and tamarind water to create a complex, multi-textured, addictively seasoned snack that simultaneously delivers crunchy, soft, sharp, spicy, sour, and umami sensations in every bite.
