Fenugreek

Khansland Fenugreek is organically grown dried fenugreek seeds — small, hard, irregular, golden-yellow seeds with a distinctive bitter, maple-like aroma and flavour that is one of the most important background spices in South Asian cooking. In the right quantity, fenugreek adds a complex, slightly bitter warmth that supports and deepens the flavour of fish curries and lentil preparations. In excess, it becomes overwhelming.

Fenugreek is an essential component of panch phoron — the Bengali five-spice mix — where it contributes its bitter, slightly maple-like character as a deliberate counterpoint to the sweeter and more aromatic spices in the blend. It is also used individually in certain fish curry preparations, particularly for the preparation of traditional hilsa and dried fish (shutki) curries, where its bitterness cuts through the rich, oily character of these strongly flavoured fish.

Fenugreek leaves — methi shak — carry the same characteristic bitter, slightly mapley flavour as the seeds but in a fresh, herbaceous form. In traditional Bangladeshi medicine, fenugreek seeds are widely used as a blood sugar management aid — soaked overnight and consumed first thing in the morning, or ground into a paste for topical application for joint and muscle relief.
