Dried Red Chili

Khansland Dried Red Chili is organically grown whole red chilies sun-dried to a moisture content that ensures long shelf stability without any artificial preservatives, sulphur dioxide, or fumigants that commercial dried chili often contains. The sun-drying process over three to four weeks concentrates the chili's natural capsaicin, carotenoid pigments, and flavour compounds to produce a spice of deep colour, intense aroma, and genuine flavour depth.

Dried red chili is distinct from fresh green chili and ground chili powder in the specific type of heat and flavour it contributes. The drying process converts many volatile flavour compounds into new aromatic molecules that give dried red chili a deeper, slightly smoky, more complex heat character with a subtle sweetness from the concentrated carotenoid pigments.

Whole dried red chilies are the essential tempering spice in Bengali cooking — split open and added to smoking hot oil at the very beginning of almost every preparation, they release their aromatic compounds into the cooking fat and create the flavour foundation upon which the rest of the dish is built. Our dried red chilies are sourced from smallholder farms in Bogra, Rajshahi, and Comilla and packed whole to preserve the full flavour until the moment of use.
