Dried Eggplant

Khansland Dried Eggplant is shukno begun — brinjal sliced into rounds and sun-dried to concentrate its naturally rich, earthy, slightly smoky flavour and produce a shelf-stable ingredient used both as a cooking ingredient and as the basis for a traditional Bangladeshi crispy snack preparation. The drying process transforms the eggplant's flesh from soft and spongy to dense and leathery, with a concentrated flavour significantly more intense than fresh eggplant.

Shukno begun is most famously prepared as a crispy bhaji — rehydrated briefly in water, then deep-fried in hot mustard oil until crisp and golden, producing rounds with a crackling outer shell and a dense, intensely flavoured interior. This preparation has a different, more concentrated character than fresh begun bhaji, with a depth of flavour from the concentrated natural sugars caramelising rapidly in the hot oil.

Beyond bhaji preparation, dried eggplant is added to slow-cooked mixed vegetable preparations and certain traditional stew preparations where its concentrated flavour contributes depth to the overall dish. In some regional preparations, shukno begun is simmered in a light mustard-paste sauce that showcases the interaction between the earthy, concentrated eggplant and the pungent, sharp mustard.
