Date Palm Jaggery

Khansland Date Palm Jaggery is one of the most seasonally precious and culturally significant food products in Bangladesh — a winter-exclusive delicacy produced only during the three cool months of Poush, Magh, and Falgun when the date palm trees of Jessore, Khulna, and Rajshahi release their sweet sap in response to cold nights.

The sap collection process is deeply traditional. Experienced gachhi (sap collectors) climb the date palms before dawn, remove the clay pots from the previous evening's collection, and replace them with fresh earthen vessels. The morning-collected nolen ras is the purest and most delicate, with a distinctive fresh sweetness and complex floral fragrance. It is brought immediately to boiling vessels and processed within hours to prevent fermentation.

Nolen gur has a flavour that defies simple description — simultaneously sweet, slightly smoky from wood-fire cooking, faintly fermented from enzymatic activity in the sap, and deeply complex with an almost wine-like quality. It is the essential ingredient in nolen gur mishti doi — Bangladesh's most celebrated winter delicacy — and in payesh and sandesh made by the finest sweet shops of Dhaka. Our date palm jaggery is sourced exclusively from traditional gachhi families in the Jessore region.
