Cumin

Khansland Cumin is organically grown and hand-cleaned dried cumin seeds of the distinctive elongated, light brown variety with a concentrated aromatic oil content that gives them their characteristic warm, earthy, slightly smoky fragrance — along with freshly ground cumin powder for convenience.

Cumin is indispensable in two key roles in Bengali cooking: as a whole seed for tempering in hot oil, where it sputters and releases its essential oils to create the flavour base for dal, vegetable curries, and rice preparations; and as ground powder blended with coriander, turmeric, and chili to create the masala base for meat, fish, and lentil curries.

Dry-roasting whole cumin seeds in a hot dry pan for 60 to 90 seconds until they deepen in colour and release their aroma intensifies their flavour dramatically, producing a spice with a deeper, nuttier, more complex character. This roasted, ground cumin — jira bhuna — is the secret ingredient in many traditional Bengali spice blends and is particularly important for finishing dal and raita where the cumin's warmth is needed as a flavour accent.
