Coriander

Khansland Coriander is organically grown and available as whole dried coriander seeds or freshly ground coriander powder, delivering a bright, citrusy, warmly spiced fragrance with a clean, slightly sweet undertone that makes coriander one of the most essential spices in South Asian cooking.

Ground coriander is the highest-volume spice used in Bengali cooking after turmeric — it appears in virtually every curry base, every marinade, and every spice blend. Its role is primarily as a base note and body builder: it provides a mild warmth and a slightly sweet, citrusy complexity that prevents curry masalas from being too sharp or too flat.

Whole coriander seeds, when briefly dry-roasted and then coarsely ground, develop a distinctly different character from raw ground coriander — nuttier, warmer, with a more pronounced citrus note from the heat-activated terpene compounds in the seed coat. This roasted, coarsely ground coriander is the traditional seasoning for certain Bengali fish preparations and for the finishing spice addition in some regional mutton curries.
