Clarified Butter / Ghee

Khansland Ghee is produced using the traditional bilona method — the most labour-intensive and highest-quality process for ghee production — which begins with culturing full-fat organic cow's milk into yogurt, churning the yogurt in a wooden bilona vessel to separate butter, washing the butter in cold water, and then slowly clarifying it over a very low flame until all moisture is removed and the milk solids achieve a deep golden colour.

The bilona process produces ghee that is fundamentally different from ghee made by directly clarifying uncultured cream. The culturing step creates a complex array of flavour compounds during fermentation — including diacetyl and butyric acid esters — that give bilona ghee its deeper, more complex, slightly tangy richness. The result is a ghee with extraordinary aroma, clean flavour, and a characteristic granular texture when cool.

A single spoonful transforms khichuri, biryani, and halwa from satisfying to transcendent. Drizzled over hot dal or warm roti, it enriches every component of the meal with its fat-soluble vitamins A, D, E, and K. In traditional Bangladeshi cooking, ghee is the essential finishing oil for the most important preparations — the final tarkas for rich gravies, the aromatics for wedding biryanis, and the enrichment for festive payesh.
