Ash Gourd

Khansland Ash Gourd is organically grown chalkumra — winter melon, the large, pale-green, waxy-skinned vegetable that holds a unique position in the Bengali kitchen as both an important culinary ingredient and one of the most valued plants in traditional South Asian medicine and Ayurvedic practice. Its firm, white, mildly flavoured flesh and extraordinary keeping quality — a whole ash gourd will keep at room temperature for 12 months without refrigeration — make it one of the most practical and versatile vegetables in the traditional household.

In Bengali cooking, ash gourd appears primarily cut into large cubes and slow-cooked in a simple preparation of onion, ginger, cumin, and mustard oil, producing a mild, slightly sweet vegetable curry. The vegetable's neutral character makes it an excellent canvas for bolder spicing — cooked with dried fish (shutki) or prawns, it develops a completely different, deeply savoury character.

Ash gourd is also the primary ingredient in petha — the famous candied sweet where the vegetable's high water content and neutral flavour make it ideal for the candy-making process. In Ayurvedic practice, ash gourd juice is considered one of the most cooling and calming foods available, valued for mental clarity, digestive health, and as a general tonic for maintaining balanced constitution through seasonal changes.
