Amaranth Leaves

Khansland Amaranth Leaves are freshly harvested organically grown data shak — the red and green leafy vegetable of the amaranth family that is simultaneously one of the most nutritionally dense and most visually striking vegetables in the Bengali kitchen, with its characteristic deep red or variegated leaves providing extraordinary visual interest alongside its exceptional nutritional profile.

Data shak has one of the highest iron contents of any commonly consumed leafy vegetable — significantly higher than spinach per gram — along with excellent calcium, vitamin C, and protein content. This nutritional richness, combined with its mild, slightly earthy, pleasant flavour, makes it an important dietary component particularly for women and children in traditional Bangladeshi households where iron deficiency is a concern.

The cooking of data shak is simple and rapid — the leaves and tender stems need only a brief stir-fry over high heat with garlic, dried red chili, and a generous pour of mustard oil to produce a vibrant, flavourful, deeply coloured preparation. The red variety bleeds its colour into oil and other ingredients during cooking, producing a striking reddish tint in the finished dish.
